Lemon & Lime Cheesecake

Description:
A quick and simple chesecake recipe
Ingredients:
300g Ginger Nuts
75g (3oz) butter, melted
750g Mascarpone cheese
60g (1 ½oz) icing sugar, sifted
Juice of 2 limes & finely grated zest
Juice of 1 lemon & finely grated zest

Equipment:
Food processor
Rolling pin
6 small loose bottom flan tins
Method:
Crush Ginger Nuts in Food Processor (or put in plastic bag and bash with rolling pin)
Mix the crushed ginger biscuits with the melted butter,
Press into the bottom of the tins and leave to set.
Beat mascarpone cheese, icing sugar and lime/lemon zest & juice together.
Spread over the base and chill for 30 mins
