Salmon and noodle risotto.

Description:
Perfect as a quick snack, or 'doubled up' as a tasty meal. Works with or without the salmon.
Ingredients:
- 1 pint veg stock
- 1 medium onion finely slced
- 3 cloves of garlic finely sliced
- 1 chilli finely sliced
- Dash of dark soy sauce
- Dash of sesame oil
- 4 leaves of cabbage finely sliced
- 1/2 cup of frozen sweetcorn
- 1/2 cup of frozen peas
- 1 cup grated cheese
- Small chunk of grated parmesan
- 1 or 2 sheets of dried fine noodles
- Small salmon fillet, or smoked salmon pieces.

Method:
Pour the stock into a large pan and bring to the boil. Add the onion, garlic, chilli, soy sauce and sesame oil and simmer for about 5 minutes.
Add the sweetcorn, peas and cabbage and bring back to the boil.
Whe the cabbage is nearly cooked add the noodles and stir gently to mix the ingredients. Add a little water or stock if required. There should be just enough liquid to cook the noodles.
When the noodles are cooked add the grated cheese and stir to melt it. When melted, add the grated parmesan and stir again. Break the salmon fillet or smoked salmon pieces and gently stir in until cooked through.
Serve immediately.
