Vegan Black Pudding (V)

Ingredients: 

1 onion - finely chopped
3 mushrooms - finely chopped
4 cloves of garlic - finely chopped
240g black beans - cooked and smashed
2 tbsp oats
tbsp tamarind paste
tbsp dark soy
tsp parsley
tsp thyme
tsp ground black pepper
oil for frying

Cooking Time: 
1 hour
Method: 

Fry the onions in a frying pan over a medium heat until softened.

Add the garlic and cook.

Add mushrooms and cook until the moisture is released.

Add the cooked black beans, oats and all other ingredients and cook, stirring thoroughly to combine all ingredients into a thick paste.

Remove from heat and allow to cool slightly.

Lightly oil some greaseproof paper and place the mixture onto it. Roll up firmly into a sausage, sealing the ends tightly.

Tightly wrap the sausage in foil and place into a steamer for 1 hour.

When cooked, allow to cool before cutting into slices and frying for a few minutes each side. Serve immediately.
