Watercress Soup

Description:
A light and tasty soup
Ingredients:
3-4 bunches of watercress
4-5 medium/large potatoes
4-5 cloves of garlic
2 onions
salt & pepper to taste
Veggie stock (optional)

About 25 mins
Equipment:
Large pan
Stick blender/liquidiser
Method:
Wash watercress well and place in a large saucepan
Chop potatoes, onions and crush garlic, and add to saucepan
Fill the pan to within an inch of the top with water and add salt and pepper
bring to the boil and simmer for about 25 mins
Blend using a liquidiser or stick blender until smooth
Garnish with a swirl of double cream (optional)
