Easy Chapati
Incredibly simple to make Indian style flat breads. Perfect with soup, curry etc. Works great with the Noodle Soup.
3 Cups Self Raising Flour
1/2 Teaspoon Salt
100ml Milk (Approx)
Ghee or Oil for frying
Ghee or Butter for brushing
For spicy chapati, add Nigella seeds, Cumin seeds, Black Pepper, Ajwain seeds and Chilli flakes to the flour before mixing.
Heavy frying pan
Pastry brush
Add flour and salt to a large mixing bowl and stir with a fork. Add the seeds and spices if required.
Slowly pour in half of the milk and mix with the fork until it starts to form a dough.
Slowly pour in the remaining milk little by little and kneed with your hands until a smooth ball of dough is formed. If the mix is too sticky add some more flour to bring it back. If too stiff add a little more milk. The dough shoulkd be soft and light.
Continue kneeding for approx 5 minutes.
Place dough in a bowl and cover with a damp tea towel and rest for 30 minutes.
Break into golf ball sized lumps.
Roll each ball into a round about 5mm thick.
Fry in an oiled pan on medium high heat.
Brush with butter or ghee, turn over and brush cooked side with ghee and turn back over for a few seconds.
