Garlic Rice (V)

Ingredients:
1 Cup Basmati Rice
1 Onion
½ Bulb Garlic
Ghee
1 Veggie Stock Cube

Cooking Time:
15 mins + 5 mins
Method:
Finely chop onion
Peel and slice the garlic
Sweat the onions and half of the garlic in a little ghee and set aside
Fry the rice in a little ghee
Add about 2 pints of veggie stock to frying pan and boil until not quite cooked
Turn off the heat and let the rice stand for about 30 mins or more
Add the fried onions and the rest of the garlic
Fry for a few mins until warmed through
