Roast Potato Salad

The perfect accompaniment to any BBQ.

Ingredients: 
  •  350g anya potatoes
  •  4 cloves of garlic, finely chopped
  •  salt and pepper to taste
  •  pinch of chilli flakes
  •  1 tbsp olive oil
  •  4 slices of german pepper salami
  •  1 shallot, finely chopped
  •  3 tbsb mayonnaise

Cooking Time:

Method: 
  • Chop the potatoes into bite sized pieces, place in a bowl and coat with the olive oil. Sprinkle in the salt, pepper, chilli flakes and chopped garlic and toss thoroughly to coat the potato pieces.
  • Place the potatoes onto a baking tray and cook in a preheated oven at 200C for 40 minutes.
  • Remove the potatoes from the oven and allow to cool completely.
  • Dry fry the salami and set aside to cool.
  • When cool, slice the salami into small pieces and add to the cooled potatoes along with the chopped shallot.
  • Gently stir in the mayonnaise and serve.
