Roast Potato Salad

Description:
The perfect accompaniment to any BBQ.
Ingredients:
- 350g anya potatoes
- 4 cloves of garlic, finely chopped
- salt and pepper to taste
- pinch of chilli flakes
- 1 tbsp olive oil
- 4 slices of german pepper salami
- 1 shallot, finely chopped
- 3 tbsb mayonnaise

Method:
- Chop the potatoes into bite sized pieces, place in a bowl and coat with the olive oil. Sprinkle in the salt, pepper, chilli flakes and chopped garlic and toss thoroughly to coat the potato pieces.
- Place the potatoes onto a baking tray and cook in a preheated oven at 200C for 40 minutes.
- Remove the potatoes from the oven and allow to cool completely.
- Dry fry the salami and set aside to cool.
- When cool, slice the salami into small pieces and add to the cooled potatoes along with the chopped shallot.
- Gently stir in the mayonnaise and serve.
