Sticky Toffee Pudding

Description:
Delicious served warm with ice cream or cream (or both). Can be reheated in microwave.
Ingredients:
6 oz stoned dates
10fl oz water
1 tsp sodium bicarbonate
6 oz caster sugar
2 oz butter
2 eggs
1 tsp vanilla
6 oz SR flour
Sauce
7.5 oz soft brown sugar
4.5 oz butter
6tbsp double cream

180°C/350°F/Gas 5

30-40 mins
Equipment:
Liquidiser
9" Cake Tin
Greaseproof Papaer
Method:
Grease and line a 9" cake tin
Boil the water, pour over dates then add bicarb leave to stand for an hour
Liquidise the dates
Cream the butter and sugar
Add 2 eggs and 1 tsp vanilla then add 6 oz SR flour
Mix in the date mixture
Pour into cake tin and cook at 180° for 30 - 40 mins
Sauce
Put Sauce ingredients in pan, heat slowly until all sugar dissolved
Bring to the boil and boil for 3 mins
If made before served heat each portion in microwave for 1 minute
