Sweet Chilli Sauce
A simple to make, yet very tasty Sweet Chilli Sauce. Garlic and chilli quantities can be adjusted to suit your own taste.
1 cup white wine vinegar
1 cup sugar (dark muscovado works well)
1/2 cup water
4 cloves garlic, finely chopped
1 large red chilli finely chopped
Place all ingredients in a sauce pan or pot and bring to a rolling boil.
Reduce heat to medium and let simmer for 10 minutes, or until reduced by half.
Remove from heat and taste-test. You should taste "sweet" first, followed by sour, then spicy and salty notes. If the sauce isn't sweet enough, add a little more sugar. If not spicy enough, add more chili.
If you prefer a thicker sauce add a little cornflour and water mixture to thicken it slightly. Remember the sauce wll thicken as it cools.
Pour sauce into a small bowl or jar.
